Cakes are a way to unite traditional ingredients in a dish, also traditional, but with a twist of flavors and textures that will always make your diners feel at ease.

What do you need?

1 chicken breast
2 leeks
1/2 white wine
Mashed potatoes
Grated mozzarella cheese
Olive oil
Salt and pepper

How do you do it?

Step 1: Chop the leek (also known as ajoporro) in small slices, place it in a pan with olive oil and cook until tender, add the chicken in pieces previously seasoned. After the protein pieces are browned, add the wine and cook over high heat for a few minutes. Turn off and reserve.

Step 2: In a refractory place butter to prevent the mashed potatoes from sticking, place a layer of it, then a layer of the stir fry of chicken and leeks and build layers until all the ingredients are exhausted.

Step 3: After the cake is assembled, place on the last layer, which should be mashed potatoes, mozzarella cheese and put in the oven to gratin.

This dish can be made with chicken in threads, which you will be able to obtain after parboiling the chicken and thus, obtain the basis for a succulent vegetable cream that perfectly accompanies this recipe.
