8 oz. (225 g) of finely diced bacon (1½ lb) 700 g of beef 1 tablespoon of soy sauce Fresh ground pepper to season the meat 1 tablespoon of lemon juice 2 cloves of minced garlic¼ cup of cilantro2 minced serrano peppers2 cubes chicken broth 4 cups water 1 ½ cup salsa verde 2 cups cooked bay beans, hot

In a deep bowl, add the soy sauce, lemon juice and pepper, add the meat and marinate for a few minutes. In a skillet over medium heat, add the bacon and fry for 8 minutes or until crisp. Then remove to drain and reserve. In a saucepan over medium heat, add the oil and the meat. Cook over medium heat for 8 minutes, which is when the meat has released its juices. Pour in the green sauce when the meat has released its juices, then add the 4 cups of water and the chicken broth as well as the ground pepper. After the first boil, cover the pot and cook over low heat for about 15 minutes. or until the meat is cooked through. Add the bacon and ½ onion to cook for 5 more minutes. Then remove the onion, add the beans, and serve with avocado slices, chopped onion, lemon juice, and crispy bacon.
