To prepare the lentil and goat cheese salad you need the following ingredients:
2 sprigs of thyme¼ cup of celery½ cup of grained salt1 cup of lentils½ shallot½ tablespoon of wine vinegar1 carrot¼ cup of olive oil½ tablespoon of mustard Red onion, ½ piece½ cup of walnuts½ cup of goat cheese

In a pot with water and over medium heat add the thyme and red lentils. Boil for 10 minutes. Then add the celery, carrot, and red onion. Mix and cook for 10 more minutes. After time, remove from heat and drain the lentils. Reserve.In a bowl add ½ cup of grain salt, salt and pepper to taste, shallot, wine vinegar, olive oil, mustard and mix very well until the ingredients are integrated.Finally, add the dressing to the lentils , walnuts and goat cheese. Stir well and serve, you can cook it with the help of a mold if you prefer.
