We have two ways to make an exquisite chipotle chicken, both are simple and delicious. The first is with a juicy marinade so that later you cook the pieces either on the grill or in a pan, and the other is with a sauce in which the chicken will be cooked. We will teach you both ways so that you can choose the one that most provokes your craving

This chicken is perfect for your tacos, burritos, salads or to build your plate with rice, beans and guacamole.

Chipotle marinated chicken

Ingredients:

2 pounds of boneless, skinless chicken thighs. You can also opt for filleted breast.
1/4 cup adobo sauce (the one that accompanies canned chipotles). Add two chilies if you want your chicken to be spicy.
2 tablespoons of extra virgin olive oil.
2 tablespoons of apple cider vinegar.
1/2 medium red onion.
2 teaspoons of salt 1/4 cup of water.
Spice: 1 tablespoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of oregano, 1 teaspoon of pepper, 3 cloves of garlic.

preparation:

Blend all the ingredients, except the chicken and the water, until it is a smooth puree and then add a quarter cup of water and integrate well into the mixture.
In a plastic bag (Ziploc type) place the chicken pieces and pour the marinade. Massage and mix the chicken into the marinade completely.
Store the chicken in the refrigerator to marinate for at least eight hours (you can leave it overnight).
Remove the chicken from the marinade and grill or cook it on the stove. Preheat a skillet over medium-high heat, add two tablespoons of olive oil and then put in a few pieces of chicken (it is better to cook in so many without saturating the pan). Brown the chicken for three minutes on each side, then reduce the heat to medium, cover, and let the chicken finish cooking.
Once cooked, let the chicken rest for 15 minutes and it’s time to chop the meat into pieces with a knife. Ready!

Chicken in chipotle sauce

Ingredients:

6 pieces of chicken
6 chipotle peppers marinated
3 garlic
1 onion
1 tomato
5 tablespoons olive oil
4 cups of water
1 sprig of coriander
1/2 teaspoon salt

preparation:

Cook the chicken in a pot of water with salt, cilantro, 1/2 onion. Reserve the broth.
Roast the remaining garlic, tomato, and onion. Blend with the chipotles and salt; add a little chicken broth.
Heat a frying pan with the oil and fry the pieces a little for three minutes on each side. Pour in the sauce and cook over medium heat for a few minutes.
Cook over low heat until it boils. If necessary add a little chicken broth.
As soon as the chicken is cooked it is ready to be served.

If you prepare a good quantity of this recipe you can freeze it, it will keep perfect for a period of up to 4 months.
